In the heart of the Fribourg Pre-Alps, Le Baron restaurant has reopened its doors in a five-century-old historic building, now dedicated to a cuisine that is both socially conscious and deeply rooted in its local area.

With seating for around twenty guests, Le Baron offers an intimate and refined experience through tasting menus that change with the seasons.

Open from Wednesday evenings to Sunday lunchtimes, the restaurant showcases authentic cuisine, crafted from carefully selected local produce, mainly sourced from the Charmey region and its surroundings, in line with our philosophy of promoting the local area and being mindful of what we consume on a daily basis. Working closely with local producers, every ingredient is used to its full potential, with particular attention paid to the region’s cheese-making traditions.

Chef Andrea Bianchi, of Italian origin, creates subtle dishes that blend his two identities: his Italian heritage and his chosen Swiss way of life. Together with his wife, Giulia Fruci, he runs this venture with passion, whilst respecting the ingredients.

For all these reasons, we have decided to offer two tasting menus: the first features a variety of seasonal produce, such as fish from the lake, homemade ravioli inspired by our childhood memories, and beef from our region; the second menu is entirely based on cheese, the star of the Charmey and Gruyère regions, but reimagined in our own style, for example with homemade gnocchi stuffed with Vacherin, served with shallots and an elderflower and walnut jelly, which, in a single mouthful, can evoke the flavour of a traditional Vacherin fondue, and, of course, as the main course, a cheese tasting.
